Super Easy Chicken Taco Recipe

Happy National Taco Day, y’all! In honor of today, I’m sharing one of my favorite dishes–a super easy Chicken Taco Recipe! I don’t eat red meats, so when it comes to tacos, I eat either chicken tacos or turkey tacos.

I usually make this for three people (mom, dad, and myself), and usually everyone eats three tacos. So adjust the number of shells and chicken breasts as needed.

Prep Time: 10-15 Minutes
Cook Time: 15-25 Minutes

To save on prep time (and money), you could use a taco kit that comes with the shells/tortillas and seasoning and buy shredded cheese and shredded lettuce. Meat, toppings, and other items have to be purchased separately.

Ingredients:

  • At least 3 whole Boneless, Skinless Chicken Breasts
  • 9+ Hard Shells and/or Soft Tortillas
  • Seasoning (Use taco seasoning or make your own with chili pepper, cumin, salt, black pepper, and paprika)
  • Canola Oil or margarine (for cooking the chicken in the skillet)
  • Toppings:
    • Shredded Cheese
    • Diced Tomatoes
    • Sour Cream
    • Corn
    • Shredded Lettuce
    • Anything else you’d like to add!

Other things you’ll need:

  • Spatula (I recommend plastic, so you don’t scrap your pan.)
  • Skillet or Wok
  • Dicing Knife
  • Bowls for sharing ingredients

Instructions:

  1. Dice the chicken breast up into squares.
  2. After warming the stove up, pour 2 table spoons of canola oil (or use the same amount of margarine) into your skillet. Using your spatula, scoot around the oil to make sure the bottom of your skillet is covered.
  3. Toss the chicken in. If your stove is on high, it should take around 10 minutes to be browned and done. If you prefer to cook on medium, cook time should be around 15 minutes.  Be sure to stir and turn the chicken over occasionally, so it does not burn.
  4. While the chicken is cooking, you can dice your tomatoes and prepare any other toppings if they’re not pre-diced.
  5. After the 10 minutes (or whenever the meat is done and browned), add one cup of water then stir your seasoning in. If you were cooking on high, turn it to medium, and let the food cook for about 4 minutes. Don’t forget to stir occasionally!
  6. Time to serve! Be sure to let the meat cool off for about 5 minutes before eating. Place your meat and toppings (cheese, lettuce, corn, etc.) in different bowls on the dinner table, and chow down!
